Toad in the Hole is a classic British dish featuring savory sausages baked in a fluffy Yorkshire pudding batter. It's a comforting, hearty meal often served with rich onion gravy and a side of vegetables, perfect for warming up on a chilly day.
Ingredients
For the Toad in the Hole:
6 good-quality pork sausages (or vegetarian sausages if preferred)
1 cup (125g) all-purpose flour
2 large eggs
1 cup (240ml) milk
1/4 tsp salt
2 tbsp vegetable oil
For the Onion Gravy (optional):
2 large onions, thinly sliced
1 tbsp butter or oil
2 tbsp flour
2 cups (480ml) beef or vegetable stock
1 tsp Worcestershire sauce
Salt and pepper, to taste
Preparation
Prepare the batter:In a mixing bowl, sift the flour and salt. Make a well in the center and crack in the eggs. Gradually whisk in the milk, forming a smooth, lump-free batter. Let it rest for 30 minutes.
Cook the sausages:Preheat your oven to 220°C (425°F). Add the oil to a large baking dish (or oven-safe skillet) and place it in the oven to heat. Once hot, add the sausages, rolling them in the oil. Cook for 10 minutes until they start to brown.
Combine sausages and batter:Carefully pour the batter over the sausages, ensuring they remain spaced apart. Quickly return the dish to the oven and bake for 25-30 minutes. Do not open the oven door during baking to avoid deflating the batter. It’s ready when the pudding is puffed and golden.
Make the onion gravy (optional):While the Toad in the Hole cooks, heat butter in a skillet over medium heat. Sauté the onions until caramelized (10-15 minutes). Sprinkle the flour over the onions, stirring well, then gradually add the stock. Simmer until thickened, about 5 minutes. Stir in Worcestershire sauce and season to taste.
Serve:Slice the Toad in the Hole and serve hot with onion gravy and a side of steamed greens or roasted vegetables.
