Shepherd's Pie is a classic English comfort dish, traditionally made with minced lamb cooked in a savory gravy, topped with creamy mashed potatoes, and baked until golden and bubbling. A hearty and satisfying meal, it's perfect for cozy evenings and has been a family favorite for generations.
Ingredients
For the Filling:
2 tbsp olive oil
1 large onion, finely chopped
2 carrots, diced
2 celery sticks, diced
2 cloves garlic, minced
1 lb (450g) ground lamb (or beef for Cottage Pie)
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 cup (240ml) beef or lamb stock
1/2 cup (120ml) red wine (optional)
1 cup (150g) frozen peas
1 tsp fresh thyme (or 1/2 tsp dried thyme)
Salt and pepper, to taste
For the Mashed Potato Topping:
2 lbs (900g) potatoes, peeled and chopped
4 tbsp butter
1/3 cup (80ml) milk
Salt and pepper, to taste
Preparation
Prepare the mashed potatoes: Boil the potatoes in salted water until tender, about 15-20 minutes. Drain, then mash with butter, milk, salt, and pepper until smooth. Set aside.
Cook the filling: Heat the olive oil in a large skillet over medium heat. Sauté the onions, carrots, celery, and garlic until softened, about 5 minutes. Add the ground lamb and cook until browned, breaking up any lumps.
Simmer the sauce: Stir in the tomato paste, Worcestershire sauce, thyme, and red wine (if using). Cook for 2 minutes to reduce slightly. Pour in the stock, bring to a simmer, and cook for 15 minutes until the mixture thickens. Stir in the peas and season with salt and pepper.
Assemble the pie: Preheat your oven to 200°C (400°F). Spoon the meat mixture into a baking dish, spreading it evenly. Top with the mashed potatoes, smoothing it over with a spatula. Use a fork to create ridges on the surface for a crispy finish.
Bake: Place the dish in the oven and bake for 25-30 minutes, or until the topping is golden brown and bubbling around the edges.
Serve: Let the pie cool for a few minutes before serving. Enjoy with steamed vegetables or a simple green salad.
